Knight Artorias in the Dark Souls DLC, is simultaneously one of the hardest, and coolest boss fights I've ever faced.
Then you find out that his arm that's broken and useless is his sword hand, and he's been kicking your ass with his off hand, making him even more badass.
Pretty much everything from cuphead.
